anyone knows of an enrichment that can tell me whether a work email is hosted by Google Workspace or Outlook? I only wanna target users with Google Workspace accounts

You can do this by checking the domain’s MX records in Clay. If they return aspmx.l.google.com → Google Workspace, and if you see outlook.com / office365.com → Microsoft. Just add a formula column to auto-tag each.
