Understanding Exclusion in Table Creation

Hi team could you please explain to me how the exclusion works? While creating a new table, only one table to exclude is offered. But I have much more tables and cannot choose the necessary one.

sorry, forgot to follow up. This currently only allows you to exclude other lists of records from find companies or find jobs sources, not other custom tables with other sources. However, that was already considered an may be added soon too.
