When a webhook table reaches its capacity limit, you'll need to create a new webhook to continue processing webhooks. The data has been received (as indicated by the 7k+ count), but may not be displaying properly in the table view.
To resolve this, you'll need to create a new webhook table to continue receiving data. Enterprise Plan users also have access to auto-delete functionality which can help manage webhook data more efficiently.
